If you’re asking what Sponge Candy is, you’re probably not from the Buffalo area. Like Buffalo Wings, Sponge Candy is an area specialty that tastes amazing! The area around the Great Lakes has been producing Sponge Candy for over a hundred years, back when nearly 200 family run chocolate shops and soda fountains made sweets all over the city of Buffalo.
Just like back then, we mix sugar and other ingredients in a huge copper pot over an open flame stove to create our sweet and crisp center. Once taken off the stove, more ingredients are added and the mixture is hand whipped vigorously with a wooden paddle. The Sponge then is left to raise and harden overnight.
The result is a light as air, almost molasses like sweet and crunchy center that melts into itself once you bite into it. After the sponge is cut into bite sized pieces, we hand dip each piece so that it retains a thick layer of our delicious chocolate – milk, dark, orange, ivory, or peanut butter.
